"Le Colombier" was created in 1874 under the sign : upperclass house "At the real cassoulet from Castelnaudary". Lead by Mister Colombier at the beginning of the last century, this restaurant became progressively a reference concerning the casoulet speciality and within Toulouse, the "pink city". In 1976, Mister Zasso, a former employee of the CGT (general transatlantic company) and of the ship "France" (which carreer ended with the disarming of the fantastic boat) repurchased the already well-known retaurant and renamed it : "Le Colombier", to pay homage to his predecessor. But the concept has survived thanks to the strict application of the registered recipe of the "home-made cassoulet" (recorded by notary and acquired with the restaurant).
 

And in addition to the regional menu, Mister Zasso suggests a more personal menu with a bit finer cookery, half way between the new cookery and the marktcookery.

Today, "Le Colombier" welcomes as well regional dishes's lovers as businessmen who want to try meat or fish recipes.

Groups are also welcomed for all types of events : businessmeals, weddings...
